This recipe for Old Fashion Ginger Cookies comes from my daughter-in-law, just in time for Christmas baking!
Chewy or thin, it’s all how you roll it.
INGREDIENTS:
o 3 cups all-purpose flour
o 3/4 cup packed brown sugar
o 1 tbsp. ground cinnamon
o 1 tbsp. ginger
o 1/2 tsp. cloves
o 3/4 tsp. baking soda
o 1/2 tsp. salt
o 12 tbsp. butter
o 3/4 cup molasses
o 2 tbsp. milk.
Preheat oven to 350. Melt butter in microwave or using a stove. Mix together the flour, brown sugar, spices, baking soda and salt. Add melted butter. Mix well. Add molasses a little at a time while mixing. Add the 2 tbsp. of milk. Knead. Separate dough into two wads. Roll or cut into desired shapes (see note1) and place on a lightly greased and floured cookie sheet. Bake at 350 for 8-10 mins. These babies bake quick, so be sure to keep a close eye on them!
Notes:
1. You can chill the dough 10 min. after kneading to make it more pliable to work with when rolling out thin cookies such as gingerbread men.
2. You can use dried ground ginger or equal amounts fresh ground ginger for this recipe.
3. You can adjust the chewiness of these cookies by thickness as well as adding more molasses.
